Banana Bread

Ingredients for 1 loaf

99g sugar
113g butter melted (1 stick)
2 eggs
3 ripe bananas
143g Soft White Wheat
1/2 tsp salt
1 tsp baking soda
100g chocolate chips (optional)

  1. Mill your SWW on the finest setting. Prepare a standard loaf pan by greasing and lining it with parchment paper.
  2. In a large bowl, mix the sugar, butter, eggs and bananas. Beat until well incorporated and foamy. 
  3. Add the flour, salt, soda and chips. Mix, stirring gently, until just combined.
  4. Pour into your prepared pan and let rest while you preheat your oven. 
  5. Preheat your oven to 300 degrees. Bake for 60 minutes or until a toothpick comes out clean. Cool in the pan before slicing.
Tips for success
Banana bread is a great beginner recipe for those just starting out with freshly milled flour. 
  1. Wheat berries. The recipe is written for soft white wheat since most people have that on hand. Spelt and Amaranth are both great additions to this recipe if you have them. If you are adding in a different grain you need to take into account the grain moisture or use less than 25% the total flour. 
  2. Rest. I do a short rest while the oven heats, this gives the flour a chance to absorb the liquid.
  3. Bananas. The more spotted the bananas the better! This recipe is especially good with super ripe bananas. Never toss those unappetizing brown bananas your kids won't touch! You can throw them into the freezer if you are not ready to bake and just thaw them when you have enough for a loaf.
  4. Additions. I like to add chocolate chips to my banana bread but you could also add a cup of walnuts if you would like.
  5. Parchment Sling. I like to cut an 8" by however long my parchment roll is and use that as a sling to lift the bread out. This eliminates the potential of losing the bottom of your loaf.
