Pre-Orders are for my local community as I do not offer shipping and delivery is only on bulk orders over $50. I am a stay at home mom and I only take a limited number of orders, so please place your order early to ensure you make it on the list for the week! I am located in Tilton, NH and the pickup address will be provided after your order has been placed. 

 Currently due to the business of life with two, two and under, I only offer a small selection each week. I do try to offer a couple different options each week but if you have a specific request please send me a message and I will see what I can do!

Cream of Wheat Dry Mix

$4 for 2 servings

Freshly milled Cream of Wheat Mix is full of nutrients that the box mix from the store can't compete with! I use a mix of Soft White and Khorasan for a light, buttery and slightly nutty flavor profile. This is a dry mix and instructions will be provided but are also available HERE.

Freshly Milled Flour

If you are interested in following along with my recipes but don't want to invest in your own mill just yet I offer grain, milled fresh as needed!

Pick up is available on the day baked goods are available or if you would like to request a different day, include it in your order form and I will let you know if that day is available.

Flour will be milled fresh, day of pick up, but I recommend storing in the fridge for a week and in the freezer for up to 6 months to preserve the nutrients.

Hard Red Wheat

$4/pound

Hard Red Wheat is known for its robust nutty flavor. It is high in protein and has a slight bitter taste due to the bran layer but is not overly strong. It has a chewy texture in baked goods.

Protein content 12.9-16.5%

Best used in:
Breads,(particularly artisan breads like sourdough and baguets that have a chewy texture.) Croissants, Pizza Crust, Bagels and Hard Rolls.

Hard White Wheat

Mild, sweet and nutty. This is a good mild flavor for creating breads closest in taste to white bread.

Best used in:
Breads, particularly yeasted sandwich breads and rolls. Asian-style Noodles, Flatbreads, Tortillas

Soft White Wheat

Mild, buttery flavor with a hint of sweetness. Good for baked goods as it will not over power the other flavors. Closest flavor profile to All-Purpose flour.

Best used in:
Cakes, Pastries, Cookies, Quick Breads, Puddings, Muffins, Biscuits, Crackers, Tempura Batter, Flat Breads.

Khorasan (Kamut)

$4/pound

Ancient grain known for its nutty, buttery flavor notes. Also know by its trademarked brand name, Kamut. Lower, more digestible gluten then other wheat varieties. Pairs nicely with Hard Wheat in breads.

Protein content 12-15%

Best used in:
Breads, although due to its weaker gluten structure it is best paired with a Hard Wheat. Cakes, Scones, Pasta, Soups

Rye

Nutty, earthy and slightly malty; Rye is considered a stronger flavor. Lower in gluten potential, rye is best know for marbled rye bread but needs to be combined with a hard wheat to increase the gluten percentage. Pumpernickel is typically 100% rye grain and is a denser bread because of the lower gluten.

Protein content 7-15%

Best used in:
Breads, although due to its weaker gluten structure it is best paired with a Hard Wheat. Pretzels, Crackers

Mild flavor and moderate protein content, this blend is the best for cookies, cakes, and other baked goods. Blend of Hard Red and Soft White Wheat

Substitute 1.1 ratio for AP flour in recipes
