Bruschetta

Ingredients for 6 servings

6 Roma Tomatoes
2 Garlic Cloves
half Red or White Onion
1 Tbsp Fresh Basil, chopped
3 Tbsp Olive Oil
salt to taste
pepper to taste

  1. Dice the Roma tomatoes and place them in a large bowl. Dice the onion finely and add to the tomatoes.
  2. Peel and mince the garlic, then add them to the tomatoes along with the basil. 
  3. Drizzle the oil on top and season to taste with salt and pepper. Mix together. 
  4. Allow the rest covered in the fridge for an hour to enhance the flavors
Tips for success
Bruschetta is a wonderful addition to any meal as an appetizer, paired with fresh French Bread or Baguettes!  
  1. Tomatoes. Any tomato can be used in this recipe so feel free to use whatever is on hand but I prefer Roma tomatoes in this recipe.
  2. Rest. I definitely don't always allow it to rest for an hour but it does help the flavors to all meld together.
  3. Oil. A good quality Olive Oil will make or break this recipe! If you do not have any on hand I have used Avocado Oil with very good results.

Top with Parmesan or Feta for added flavor!

Serve over Baguettes or French Bread
