Bran and Germ Granola

Ingredients for 5 cups

226g Rolled Oats (about 2c)
133g Quick Oats(about 1 1/2c)
170g Honey
5g Salt (or to taste)
28g Avocado Oil
1/2 tsp Cinnamon 
14g Vanilla
30g Egg Whites (1 egg white)
Bran and Germ up to 1/2c

Additions 1 1/2c:
Almonds, Pecans, Raisins, Dried Cranberries, Coconut Flakes ect. See below for more options.

  1. Combine all the ingredients and nuts if your are using them, and mix well until the oats are fully coated.
  2. Spread onto a large lined sheet pan, pressing it down into a single layer.
  3. Bake at 300 for 25 minutes, flipping every 10 minutes. Keep a very close eye on it in the last 15 minutes of baking as it will burn very quickly. 
  4. Cool completely before mixing in the additions. Store in an airtight container. Granola can be stored for up to one month.
Tips for success
Bran and Germ Granola is an easy way to add nutrition to a classic breakfast and snacking item!
  1. Bran and Germ. As I bake, I find there are some delicate pastries that do better sifted. I will put the Bran and Germ into a jar in my freezer and once I have about 1/2 cup I will toss it into my granola! It will keep in the freezer for up to six months.
  2. Egg White. If you like clumps of granola as apposed to tiny pieces of oats, like I do, the egg white is key! If you prefer smaller pieces you can absolutely omit this.
  3. Oats. I like a combination of Rolled and Quick oat. This adds variation in the texture. Play around with different amounts to find the texture you prefer. You can absolutely use 100% of one or the other.
  4. Additions. Additions are where you can really tailor this recipe to your taste. Nuts and Coconut can be baked with the granola but dried fruits and other toppings should be added at the end.

Combining the ingredients

The nice thing about granola, is it is super simple to make, but the combination of ingredients are where you can really make it something special! 

First, combine all your ingredients except additions like dried fruit. Nuts and Coconut can be added before baking. 

Mix thoroughly, really working the wet ingredients into the oats. You can leave the egg white out if you prefer a more crumbly granola but I love big crunchy clumps! 

Baking

Press the oat mixture into a large, parchment lined baking sheet, pressing firmly. Bake at 300for 10 minutes, flip the granola over carefully with a large spatula. Try to disturb it as little as possible to keep the clumps from breaking apart. Bake for another 10 minutes and flip one more time. Bake for five or so minutes, keeping a close eye on it. Granola will burn very quickly. We are looking for a golden crispy finished product. It will still be slightly soft but will crisp up further as it cools. Cool completely before adding in your additions.

Here's where we can have some fun! Granola additions are endless so have fun with the flavor combinations. Here are some popular granola additions. 

  • Nuts. Almonds, Pecans, Walnuts, Pistachios.
  • Dried Fruit. Raisins, Cranberries, Dried Blueberries, Apricots, Dates.
  • Coconut. Shaved, Flaked, Shredded; you can add it before baking for a toasted flavor or after baking.
  • Banana Chips. 
  • Orange and Lemon Zest. Zest adds a delightfully fruity addition to granola, lightens the flavor profile.
  • Seeds. Sunflower, Pumpkin, Chia, Flax, Hemp.
